Fall Superfoods

With colder weather and the Holidays just around the corner, our Summer foods are going out of season leaving us with our Fall favorites. Each season has its designated “superfoods”, foods high in antioxidants and packed with nutritional value, including Fall. Keep reading to find out which foods you can get your hands on this season and how they can benefit you.

Squash

Just like your favorite Summer squash, Fall and Winter squash is packed with nutrients and can be stored for much longer than most foods due to its thick skin. Squash has become a versatile food staple in the Fall and Winter months for many people, often used as a substitute for spaghetti or as a base for soup. This Fall favorite also pairs well with your favorite Fall seasonings, cinnamon and nutmeg, which also have great health benefits like antioxidants and their anti-inflammatory properties. 

Sweet Potatoes

Sweet Potatoes aren't just a Thanksgiving classic, you can eat them all season long. This variation of potatoes are sweeter and denser than regular potatoes while maintaining a good source of Iron and Vitamin A. Though many people are quick to cut carbs, this starchy food is an excellent source of nutrients while also keeping you full throughout the day. Because potatoes are so versatile you can enjoy Sweet Potatoes all season long in so many forms: casseroles, roasted, or as baked “fries”.

Eggplant

Everybody’s favorite emoji is a Fall and Winter classic! Packed with nutrients, specifically Vitamin B and its abundance of fiber, incorporating Eggplants into your diet this season is a great way to get your nutrition in while keeping your calories low. Skip the eggplant parmesans and opt for non-fried options like ratatouille or eggplant boats.

Brussels Sprouts

Although there is a love/hate relationship with Brussels Sprouts for many people, they are packed with Vitamin C, fiber, and Vitamin K, and can be very delicious if prepared with your favorite spices. Whether they are roasted or pan-seared the crispy skin will make them much more flavorful, especially when tossed with your personal favorite spices. Brussels sprouts make for a great side dish or can be tossed in with your favorite veggies and placed in an oven to roast, making for an easy veggie-packed meal.
